WThis is an easy version of a drink found on the seasonal menu. Designed as a large-volume premix which is bursting full of tastes of the holiday season, rendering it excellent for a festive gathering. Reserve the remaining syrup to use in breakfast cocktails, puddings, or to mix another batch of the drink.
Bikini Recipe
Serves 10 servings
For the Clementine Syrup (produces 750ml)
300ml recently pressed clementine juice
200ml fresh lemon juice
500g caster sugar
Ingredients for the Premix (yields 850ml, to serve 10)
400ml good quality vodka
100ml classic gin
150ml peach liqueur
200ml citrus syrup (see above)
A few cranberries, for garnish
Mandarin essential oil, for finishing
Instructions
Making the Cordial: Place every ingredients inside a pan, bring to a gentle boil, mixing to dissolve. Next, remove from the heat and leave to cool fully. Transfer to a clean bottle, close it and refrigerate it in the fridge, it can be stored for around four weeks.
To make Batch Mix: Pour every liquids into a large bottle, allow it to infuse for 60 minutes, then strain , ideally through muslin, making it completely strained.
When ready to serve: Measure 85ml of the premix into your mixing glass filled with ice, and stir gently for a minute to cool it down. Pour to a cold coupe glass or a similar vessel, decorate with a few cranberries adding the final touch with a quick spritz of the essential oil over the top.
